Healthy Wassail (adapted by Bill)

2 quarts cider

1 pint cranberry juice (sweetened with juice)

1/2 cup fructose or sugar (optional)

1 squeezed orange (pour juice in mixture)

1/4 teaspoon cinnamon

1/8 teaspoon of each: allspice, ground clove

Simmer a cup of cider with spices and fructose. and add to other ingredients

Mix with the remainder of ingredients in a crop pot. Do not boil. Set on low and leave for 2 hours. If in a hurry, warm the entire mixture until almost steaming and keep in a crock pot at low. Float slices of skin from orange. The longer it warms, the more the seasonings blend in. Some prefer to use cinnamon sticks and whole cloves. You can also stud a small orange with cloves and float that in the Wassail.

3 pints ale (48 ounces) (room temperature)

1 pint Sherry or Malaga wine

1 squeezed orange (pour juice in mixture)

1/4 teaspoon cinnamon

1/8 teaspoon of each: ground ginger, nutmeg and ground clove

Simmer 1/2 quart of cider with 1 pint of ale with brown sugar, and spices

Mix with the remainder of ingredients in a crop pot. Do not boil. Set on low and leave for 2 hours. If in a hurry, warm the entire mixture until almost steaming and keep in a crock pot at low. Float slices of skin from orange. The longer it warms, the more the seasonings blend in. Some prefer to use cinnamon sticks and whole cloves.
